The omakase service resumes at Kata Robata at 3600 Kirby, after a temporary shutdown during the pandemic. According to a press release, in 2020 the restaurant was sending out so many take-out food that there just wasn’t the ability to create the personalized omakase offerings as well.
Kata Robata is known as one of the best restaurants in Houston for omakase. It’s thanks to the executive chef Manabu “Hori” Horiuchi’s innovative ideas, which push the boundaries of traditional and modern Japanese cuisine, and his methodical way of layering simplistic and fresh ingredients in complex and beautiful presentations. Horiuchi has been nominated four times for the James Beard Award, and in 2019 Kata Robata won first place in Houston Chronicle Restaurant Critic Alison’s Cook’s. List of the top 100 restaurants.
Omakase translates to “I leave the choice to you”. Rather than ordering from a menu, diners rely entirely on a highly trained chef to select the dishes for the fixed price meal. Kata Robata’s omakase selections vary depending on the types of fish delivered daily from Japan, but it is always a mix of cold and hot dishes, and often includes seasonal nigiri and delicacies featuring United and wagyu. Even the Yuasa brand soy sauce that Horiuchi prefers for omakase is special, as it is made in Japan’s oldest soy sauce brewery and marinated in cedar barrels for over 18 months to bring out a complex umami.
Only eight omakase meals are available every night, with the exception of Sundays and Wednesdays, which are Horiuchi’s days off. The price ranges from $ 150 to $ 200, depending on customer preference and the fresh ingredients used by Horiuchi, and does not include drinks, taxes, or tips.
