New Japanese restaurant Kusaki opens in Brighton


The development and regeneration of the London Road Quarter as a true expansion of Brighton city center laid the groundwork for the private sector to step forward and help revitalize and redefine what is known as the Green Door from the city.

With the opening of Brighton’s first Japanese organic herbal vegan restaurant – Kusaki – at Circus Parade, Fabio Lauro offers a “… unique opportunity to experience another way of eating vegetables and to experience new flavors and textures … ‘to residents and visitors alike.

Kusaki – which means plant – sits in the middle of a triangle of tall trees that reflect in the restaurant’s floor-to-ceiling windows and connect you to nature before you even enter. The Shibui Ideal, the Japanese principle that Fabio based this restaurant on, tells us that this connection to nature will improve our lives and open our eyes to the beauty of real life – in this case through the provision of plant-based foods. It is an attitude. I am interested.

When we go inside, there is something very subtle and very simple about it. In pursuit of the Shibui ideal, Fabio created a modest and calm feeling about the place; discreet and unostentatious. It’s authentic with no need for decoration, so the walls are left in their brick and plaster state, punctuated only by a few original Japanese paintings in the dining room and a beautiful mural in the sushi and cocktail bar.

The exposed and mostly uncovered walls, as well as the subtle lighting, are nifty as your eyes are immediately drawn to the color of the pink blossoms of the cherry blossom in the traditional dining room, and then you notice how the color of the room is. the flower was reproduced in splashes on the mural of the modern sushi and cocktail bar. It gives you a sense of the balance – the old and the new work together. It is “a refined beauty that is unaffected by time”. It’s just lovely.

Shibui food seems simplistic, but often this path to simplicity is won by intricate and intricate variables that make them unique. Packages of Nigiri and Maki with a range of seasoned Japanese rice, silky tofu, blanched asparagus, avocado slices, mango and a chilli garnish are wrapped in thin nori belts, adorned with wasabi and delicate pieces of green adornment.

The gyoza filled with spicy kimchi and oyster mushrooms and tempura vegetables with a soy sake dip and shitake mushroom powder leads to the highlight – a green curry served with rice and panko-coated sweet potatoes. This is vegan cuisine at its best. There are so many different flavors and textures in all the dishes that you spend time trying to craft them. “Our approach, explains Fabio, is clever, fun and engaging”. Yes it is.

Fabio Lauro’s goal in creating the concept that is Kusaki is to offer his guests a colorful and creative menu, to surprise them with a “healthy and conscious culinary experience” and to make this experience accessible to all budgets. ‘Gochisousama’ to Fabio, Reuben Waller and the whole team.
