The highly anticipated Franco-Japanese restaurant Le Fantastique opens next week in SF

After more than a year of delays related to the pandemic, the opening date is set for next week at 22 Franklin St. in Hayes Valley.

The menu represents some of the things owners Robbie and Emily Wilson love the most: French wines, raw fish, and fresh bread with cultured butter.

They’re hoping Le Fantastique will function as a place where diners can book an upscale sit-down dinner or grab a quick glass of chenin blanc and munch on, say, natural sourdough milk bread dipped in crab fat ($ 15 ) before the main event elsewhere.

Robbie Wilson will be stationed behind the circular sushi bar preparing fish, aged and dried on site.

Most options are raw, but it will smoke salmon ($ 12) over alder wood and shower slices with a hit of Espelette pepper. The wild buri ($ 13), meanwhile, will be dried in lemon leaves and grilled in a meaty oil made from rib-eye bones; and the dry aged striped jack ($ 12) will be wrapped in grilled enoki mushrooms.

Other small plates include vegetable dishes like grilled romaine ($ 14) seasoned with pistachio and dried egg yolk; fried tempura-style items such as smoked black carrot ($ 8); and caviar, maybe spoon on an eclair ($ 24).

For dessert, there will be high mountains of Japanese-style crushed ice. The strawberry and cream version ($ 12) includes pickled berries, angel food cake, and condensed milk.

“I want to have fun here,” said Robbie Wilson. “What I like about the food management now is that no one wants stiffness.”

As with the food, the design is decidedly mixed. There is urban artwork on the sushi bar; elegant marble tables line the dining room; and mid-century lamps cover the ceiling.

Still, the music will do a serious boost when it comes to ambiance: the Wilson’s treat Le Fantastique much like a Japanese hi-fi bar with a state-of-the-art sound system, felt coffered ceilings, and the vinyl collection. by Robbie Wilson.
